Preheat oven to 350°
Dice up onion, bell pepper, jalapeno & garlic
Shred cheese
Dice up leftover turkey
Heat up sauté pan with a drizzle of olive oil
Sauté peppers for a few minutes - add turkey
In another sauté pan, heat oil and add corn tortillas - 10 seconds each side
Use paper towel to absorb extra oil
Lay out cooked tortilla, add turkey & veggie mix, roll up
Place rolled up enchiladas in cast iron skillet
Smother with Stinkin' Good Green Chile
Top of shredded cheese
Bake in oven for 10 mins. Remove from oven
Top with fresh pico and cotija cheese - ENJOY!
