Stinkin’ Good Green Chile Leftover Turkey Enchiladas
Have leftover turkey from Thanksgiving? Put it to GREAT use and make these Green Chile Enchiladas!

Ingredients  

  • 1 jalapeno fresh
  • 1 yellow onion
  • 1 red bell pepper
  • 3 cloves garlic
  • 1 cup shredded cheese
  • 1/2 cup cotija cheese
  • pico de gallo
  • 5 corn tortillas
  • 1 container Stinkin' Good Green Chile

Instructions 

  • Preheat oven to 350°
  • Dice up onion, bell pepper, jalapeno & garlic
  • Shred cheese
  • Dice up leftover turkey
  • Heat up sauté pan with a drizzle of olive oil
  • Sauté peppers for a few minutes - add turkey
  • In another sauté pan, heat oil and add corn tortillas - 10 seconds each side
  • Use paper towel to absorb extra oil
  • Lay out cooked tortilla, add turkey & veggie mix, roll up
  • Place rolled up enchiladas in cast iron skillet
  • Smother with Stinkin' Good Green Chile
  • Top of shredded cheese
  • Bake in oven for 10 mins.
  • Remove from oven
  • Top with fresh pico and cotija cheese - ENJOY!
