Stinkin' Good Green Chile Corn Dip

  • 1 pie dish or cast iron pan


  • 2 cups frozen corn, thawed and drained if necessary (or substitute with fresh corn)
  • 1 container Stinkin' Good Green Chile
  • 1 3/4 cups shredded Queso Fresco
  • tortilla chips/crackers/bread for serving


  • preheat oven to 350°F
  • spray a 9-inch round pie dish cast iron pan with cooking spray; set aside
  • In a large bowl add corn and heated Green Chile and stir to combine
  • pour mixture into prepared pie dish, smoothing the top lightly with a spatula
  • evenly sprinkle Queso Fresco over the top
  • bake for 30 minutes, or until the cheese has browned. Surface will be golden brown
  • serve immediately with tortilla chips, bread or your favorite dipper
  • ENJOY!
