- 1 pie dish or cast iron pan
Ingredients
- 2 cups frozen corn, thawed and drained if necessary (or substitute with fresh corn)
- 1 container Stinkin' Good Green Chile
- 1 3/4 cups shredded Queso Fresco
- tortilla chips/crackers/bread for serving
Instructions
- preheat oven to 350°F
- spray a 9-inch round pie dish cast iron pan with cooking spray; set aside
- In a large bowl add corn and heated Green Chile and stir to combine
- pour mixture into prepared pie dish, smoothing the top lightly with a spatula
- evenly sprinkle Queso Fresco over the top
- bake for 30 minutes, or until the cheese has browned. Surface will be golden brown
- serve immediately with tortilla chips, bread or your favorite dipper
